San Jeronimo de Miramar Gesha
Finca San Jerónimo Miramar is a stunning and ecologically diverse farm situated in the Atitlán region of Guatemala. The owner-operators of the farm, the Bressani family, treat the environment, employees, and their community with a deep level of care. A large portion of the farm is a private nature reserve, and they also host a lab to research natural methods for reducing fungi and pests in coffee. They also operate a dairy, producing a variety of cheeses and creams on-site, and the cows they nurture on the farm are a key part of the overall biodynamic system.

Pre-infusion; time: 0 - 0.30; 58 g of water
No agitation! Just pour circular and wait!
First pour; time: 0.30 - 1.00; 82 g of water
Pour until you see 140 g on your scale at 10 seconds and wait until 1:00
Second pour; time: 1.00 - 1.30; 70 g of water
Pour until you see 210 g on your scale at 10 seconds and wait until 1:30
Final pour; time: 1.45 - 2.30; 78 g of water
Pour until you see 288 g on your scale at 15 seconds and target time to finalize brewing is "2:30"
